Pizza Puffs

I shared with you our dinner plans for Friday Family Night dinner.
Today, I would like to share our recipe for quick, easy and tasty pizza puffs.


Bento Lunch Box 





Pepperoni Pizza Puffs adapted from Everyday with Rachel Ray 
This is my go to fun family night food and lunch box happiness. 
The girls love cold pizza.


  • 3/4 cup flour 
  • 3/4 teaspoon baking powder
  • 3/4 tablespoon Italian seasoning 
  • pinch of salt
  • 3/4 cup low fat milk
  • 1 egg, lightly beaten
  • 1 cup shredded mozzarella cheese 
  • 1/4 Parmesan cheese
  • 1 cup cubed pepperoni
  1. Preheat the oven 375 degrees. Spray a 24-cup muffin pan with cooking spray. In a large bowl, whisk together the flour, baking powder, Italian seasoning and salt. whisk in the milk and egg. Stir in the mozzarella, Parmesan and pepperoni; let stand 10 minutes. 
  2. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.
  3. Serve warm or cold. 
We don't always have all the above ingredients so I use what we have. 
I've made just cheese pizza puffs and added cheddar cheese. 
We've made a veggie packed puff before that turned out great.


This is a great Rachel Ray recipe.
